Putting Vintages in the ground Château Jean de la Monge is a property acquired by Isabelle CHETY in 2015 during her installation as a young farmer.
Château Jean de la Monge is located in the commune of Bourg, it is a clayey limestone terroir on a south-facing slope. After hand harvesting in crates, the Merlot and Malbec grapes were destemmed and then delicately introduced into 12 open barrels of French wood. They were pigeonholed every 6 hours during maceration and alcoholic fermentation, always in the presence of a musical background and then aged in these same barrels for 14 months. In June 2018, they buried 300 bottles of the 2015 and 2016 vintages for a well-deserved rest in the heart of its terroir. When will they let us taste them?
Maybe with a rabbit pate, a pan of porcini mushrooms, truffle omelet, a braised entrecote and creamy cheeses.
